Blueberry Oatmeal Protein Cookies Recipe

Craving a healthy-ish treat? Make these yummy blueberry oatmeal protein cookies with 5 ingredients only!

Here’s the thing: when you’re suddenly craving a sweet treat you’d rather use simple ingredients and you want an easy and quick but yummy recipe.

These healthy Blueberry Oatmeal Protein Cookies are made with 5 ingredients that you probably already have and are ready in less than 20 minutes. Perfect for an afternoon pick-me-up or an evening sweet craving.
With their oat and protein powder base, these cookies are filling enough to be your breakfast on the go.

As you may know, I love using Protein Powder in everything but protein shakes! Here are a few more protein snacks ideas.

Blueberry Oatmeal Protein Cookies Recipe

Ingredients for 12 small cookies:

  • 1 cup oats
  • 1 full egg + 1 egg white
  • 2 scoops of vanilla protein powder
  • 100g frozen or fresh blueberries
  • 150ml milk of your choice

Blueberry Oatmeal Protein Cookies Recipe

Blend together the oats, eggs, milk and protein powder.
Pour the mix into a large bowl and add the blueberries.
Cover a baking tray with a baking sheet and use a teaspoon to make around 12 scoops of the mix, spacing them well apart on the baking sheet (my trays are very small so I had to use two)
Bake for 10 -15min (at 200 degrees C)

Try to let them cool down before digging in!

I chose to make blueberry cookies to stay on the healthy side but you could add chocolate chips for extra yumminess.
